A few years ago on a trip to Southern California, my cousin took me to Diddy Riese. It’s a shop in Westwood, famous for its ice cream sandwiches. Now, the smell of fresh-baked cookies makes me crave a big bite of ice cream sandwich and it’s one of the easiest things to make at home.

You’ve gotta try this with ready-to-bake Sea Salt Caramel Chocolate Chunk cookie dough (I get the Private Selection store brand that’s at Smith’s, Ralph’s, and Kroger).

Since I go for cookies packed with a lot of good flavor, I like to fill my ice cream sandwiches with vanilla bean ice cream.

These ones are best when the cookies are fresh out of the oven and still gooey.
